DAR ES SALAAM: TANZANIAN food vendors have been encouraged to embrace the international food carnival concept as a strategic and innovative approach to expand their customer base and boost revenue.
This model allows vendors to showcase local Tanzanian cuisine alongside international dishes, attracting both locals and tourists interested in diverse culinary experiences.
“Food is a vital part of Tanzanian culture, reflecting the diversity of its regions, ethnic groups and history,” said Ms Moureen Ian, Event Organiser of the International Food Carnival in Dar es Salaam, during a recent event.
Participating in such carnivals fosters innovation and creativity in menu offerings, helping vendors diversify their products and remain competitive in an evolving food market.
“This exposure significantly leads to new business partnerships, increased brand recognition and insights into global culinary trends,” she added.

Ms Moureen said that these events provide local vendors with the opportunity to share authentic Tanzanian dishes, ingredients and cooking techniques with a wider audience, helping to preserve culinary traditions.

Furthermore, through interactions with international cuisines, the carnival can inspire culinary fusions that respect and enhance traditional flavours. Such events enable vendors to gain valuable insights into consumer preferences, allowing them to refine their offerings.
The carnival atmosphere encourages creativity in food presentation and recipes, enabling vendors to experiment and attract new, curious customers.
